Guided by a deep curiosity for fermentation science, the farm’s producers have developed a series of fruit-infused honey processes designed to amplify natural sweetness and aroma.
For this lot, ripe Caturra cherries are fermented with fresh strawberries in a controlled anaerobic environment. The fruit sugars interact with the coffee’s own mucilage, creating a slow, layered fermentation that infuses the beans with subtle berry esters and floral tones. After fermentation, the cherries are partially honey-dried on raised beds, allowing the coffee to retain both its clean structure and its vivid fruit perfume.
