Roaster Notes
During profiling, we pushed development just enough to bring out caramelized sweetness, cocoa depth, and a rounded body, while keeping bitterness low and acidity gentle.
The beans from Popayán are naturally dense, so they respond well to heat. We extended the Maillard phase to build a rich, warm nutty tone, then finished with a controlled development time to preserve a subtle citrus lift that keeps the cup lively.
Expect a cup that is smooth, balanced, and dependable—a comforting Colombian profile elevated by careful roasting. Excellent as espresso, crowd-pleasing as a milk coffee, and beautifully clean on filter despite its fuller roast.

In the mountains surrounding Popayán, 3000 farmers of the Wuchii collective cultivate coffee on nutrient-rich volcanic soil, benefiting from cool nights and steady rainfall. These slow-growing conditions produce cherries with concentrated sugars—perfect for a medium–dark roast profile.
While many darker roasts tend to lose nuance, Popayán coffees are prized for their structure and density, allowing them to withstand deeper roasting without becoming ashy or bitter. This is why we selected this reserve lot: its natural sweetness and washed-process clarity remain intact even as the roast reaches a fuller, more developed stage.
The result is a cup that feels familiar yet elevated—comforting like a traditional Colombian brew, but cleaner, smoother, and fuller-bodied. Expect rich caramelization, nutty warmth, and a persistent cocoa finish that pairs beautifully with milk or stands confidently on its own.
