High in the lush mountains of Huila, Colombia, sits Finca La Piragua, a small family-run farm managed by Alexander Vargas. The farm lies between 1,750 and 1,900 meters above sea level — a region blessed with cool mountain air, rich volcanic soil, and year-round rainfall, ideal for slow cherry maturation and concentrated sweetness.

The Pink Bourbon variety is a rare mutation of Red and Yellow Bourbon, known for its translucent pink cherries and refined cup character. This hybrid thrives in Huila’s microclimate, where warm days and cool nights encourage the development of complex fruit sugars and crisp acidity.

After selective handpicking, the cherries are fermented for 24–36 hours, then fully washed and sun-dried on raised beds to ensure a clean and transparent expression. This careful process highlights Pink Bourbon’s signature clarity and citrus brightness, delivering a cup that bursts with dried cranberry sweetness, grapefruit zest, and tangerine juiciness.
