Roaster Note

This Elida ASD Catuai is a tropical and indulgent cup from the very first sip. Aromas of pineapple and fruit liqueur set the stage, followed by lively sweet orange and berry sweetness on the palate. Layers of cherry-chocolate richness intertwine with a refreshing juicy fruit tea quality, giving the cup both depth and lift. The texture is smooth and rounded, while the aftertaste lingers with an elegant brown sugar sweetness that grows more intense as it cools. This is a coffee that combines vibrancy with comfort — tropical brightness, confectionery richness, and a finish that resonates long after drinking.

Elida Estate, owned by the Lamastus family, is one of Panama’s most iconic coffee producers, renowned for both its Cup of Excellence performances and its pioneering processing methods. The farm sits on the slopes of Volcán Barú, partly within a national park, where cool mountain air, volcanic soils, and high elevation slow cherry maturation and concentrate sweetness.

This lot is processed with the ASD (Anaerobic Slow Dry) Natural method. Ripe cherries are first sealed in oxygen-limited tanks to ferment in their own juices, developing layered aromatics, before undergoing a carefully controlled slow-drying stage that can last up to two months. The method enhances fruit intensity, complexity, and long sweetness while preserving clarity.

The result is a coffee that balances tropical vibrancy with sugar-rich depth: a cup that feels lush yet refined, showing both the terroir of Boquete and the innovation of the Lamastus family.
